Aam Ras Puran Poli

Ingredients


  • 1 & 1/2 Cup Chana Dal

  • 1 Cup Maida

  • 1 Cup Wheat flour

  • 1 Cup Grated Jaggery

  • 1 tsp Cardamom Powder

  • 1/2 tsp Fennel Seeds powdered

  • 1/4 tsp Nutmeg Powder

  • 2 tsp Milk Powder

  • Pulp of 1 Mango

  • 2 tbsp Ghee + Ghee for frying

  • 1/2 tsp Turmeric for colour

  • 2 pinch of Salt

  • Water for dough + 2 & 1/2 cups Water to boil Chana


Step by Step


  1. Soak the chana dal in water for 5 hours, after 5 hours boil the chana dal in a pressure cooker , adding very little salt and water and cook ir for 4 whistles. Then proceed to mash the chana dal.

  2. In a bowl, add the what flour and maida, add 2 pinches of salt and turmeric, mix it well, add water in parts to form a dough, add in some oil and knead well (not too soft, not too hard) .

  3. In a pan heat ghee, add the mashed chana dal, cardamom, fennel seeds, milk powder and jaggery and stir it well, let it cook until the water content in the mixture reduces. (Keep stirring the mixture or it will stick to the pan even if it's a nonstick vessel). Once you find the water evaporated. turn the heat off.

  4. Now form small balls out of the dough roll it in a small chapati to add the chana dal filling in the centre and coat the entire filling well, form a ball and then proceed to roll it very carefully in a full size chapati.

  5. Heat a pan, fry the puranpoli on both sides well, add ghee and fry well.

  6. Your Puranpolis are now ready to be served.
