Bombay Style Pav Bhaji in 30 mins

Ingredients


  1. Water as desired

  2. 500 gms of mixed vegetables ( cauliflower, carrot, potatoes, green peas). Boiled in 2 cups of water in a cooker for 3 whistles.

  3. Vegetable stock

  4. 1 Capsicum chopped

  5. 1 medium Onion chopped

  6. 1 tsp Red Chilly powder

  7. 3 tbsp Butter

  8. 1 tbsp Ginger Garlic paste

  9. 4 tbsp Pav Bhaji masala

  10. 1 tsp Garam Masala

  11. Lemon 1/2 squeezed

  12. Coriander for garnishing

  13. 2 medium sized Tomatoes


Step by Step


  1. Mash the vegetables in a bowl until smooth paste

  2. Heat a hollow pan and add 3 tbsp of butter

  3. Add Onions and fry them until translucent

  4. Then add ginger garlic paste and fry until the raw smell doesn't go away.

  5. Add 2 tbsp of Pav bhaji masala and fry well

  6. Add chopped capsicum and fry further for one minute.

  7. Add the mashed vegetables to the pan and mix it well

  8. Add little water and the vegetable stock and remaining pav bhaji masala and salt to the mashed potatoes in the pan and stir it well.

  9. Cover it with a lid and let it cook for 5 mins.

  10. Take the lid off and add chilly powder, mix it well.

  11. Squeeze half lime and proceed to cook for another 5 mins.

  12. Serve your Pav Bhaji with some toasted and buttered pav.
