Bombay Vada Pav | Batata Vada

  • 2 Potatoes (Boiled)

  • 2 cups Gram Flour

  • 3 Green Chillies finely chopped

  • 3 Garlic cloves finely chopped

  • 1 tsp Mustard Seeds

  • 8 - 9 Curry Leaves fine pieces

  • 2 tbsp Coriander Leaves

  • 1/2 tsp Turmeric + 1/4 tsp Turmeric for Coating

  • 1/4 tsp Baking Soda

  • 1/4 tsp Asafoetida

  • 1/2 tsp Urad Dal

  • Salt as per taste

  • Oil for Tadka + Oil for Deep fry

Step by step

  1. Boil the potatoes with some water and salt for 4 whistles until soft. Peel the potato skin off, add them to a bowl.

  2. Heat some oil in a pan and add the mustard seed and urad dal, let it crackle then add chopped garlic and fry until golden brown then add asafoetida, curry leaves, green chillies, turmeric and add this to the potatoes.

  3. Add in some freshly chopped coriander and salt as per taste and mash the potato mixture coarsely.

  4. Grease some oil on your palms and with the help of a spoon scoop some potato bhaji and form small ball shapes and place it on a plate.

  5. In another bowl add the gram flour, salt, baking soda, turmeric and water. Mix it well until it forms a thick paste consistency.

  6. Heat oil for deep frying (To check if the oil is hot enough, sprinkle some gram flour paste carefully and if it rises and crackles, it means the oil is hot enough), Now with the help of a spoon, dip the potato ball in the gram flour paste and then drop it into the hot wok of oil and fry it until light golden brown.

  7. Your Vadas are now ready to be served with some fresh paav and chutney's
