Butter Chicken Biryani | Restaurant Style Chicken Biryani

Ingredients


For Marination

  • 500 gm Chicken with bones OR Boneless

  • 2 & 1/2 cup Rice

  • 1 & 1/2 tbsp Ginger paste

  • 1 & 1/2 tbsp Garlic paste

  • 1 tsp Turmeric powder

  • 1 tbsp Kashmiri Chilli powder

  • 2 tbsp Coriander powder

  • 1 tsp Garam Masala powder

  • 1 tsp Chicken Masala

  • 1/2 tsp Kasuri Methi

  • 2 Green Chillies finely chopped

  • 3 tbsp Coriander and Mint leaves chopped ( add in parts)

  • 1 & 1/2 Tomato Puree

  • 1/2 cup Cashew paste

  • 1 cup Curd

  • 2 tsp Sugar

  • 1/2 cup Fried onions (add in parts)

  • Salt

For Rice

  • 2 & 1/2 cup Rice

  • 2 Star Anise

  • 6 Black Peppercorns

  • 4 Cloves

  • 1 inch Cinnamon

  • 4 Cardamom

  • 2 Bay leaves

  • 2 - 3 tsp Ghee

  • Salt as per taste

Additional Ingredients

  • 2 tsp Butter

  • Kesar in milk for colour



Step by Step


For Marination


  1. Take the chicken in a bowl and then add ginger and garlic paste, turmeric powder, kashmiri chilli powder, coriander powder, garam masala powder, chicken masala, kasuri methi, green chillies, salt as per taste and mix these ingredients well. Now add 1 tbsp Coriander and mint leaves, tomato puree, cashew paste, curds, sugar, some fried onions and now mix it all really well. Set it aside in the refrigerator for 7 - 8 hours.

For Cooking Rice


  1. Heat some water in a big vessel, then add the whole garam masala into the water, now add ghee, salt as per taste.

  2. Wash the rice and now add it into the vessel, give it a light stir and proceed to par boil the rice. Once it's done, strain the rice.

Cooking the Chicken


  1. In the same vessel, add butter and now add the marinated chicken into the vessel and give it all a good stir so the butter gets coated well with all the masala and chicken.

  2. Now cover with lid and let it cook for 10 - 12 mins ONLY ( The Chicken should be half cooked at this point)

Layering the Biryani


  1. Place an old pan over the fire and then place a big vessel over it to cook the biryani.

  2. Now add 1 layer of rice in the vessel, place it evenly, now spread few pieces of chicken over the rice layer, then add another layer of rice over the chicken layer it entirely over the chicken, now spread a little kesar milk color over the rice (can use green colour additionally), spread some fried onions, little coriander and mint leaves. Then spread some more chicken pieces along with the gravy over it, layer it with rice again, then spread some colour over the rice, now add the rest of the chicken, some fried onions, some mint and coriander leaves and now finally layer it with all the remaining rice, now you can spread the the remaining fried onions, colour and coriander and mint leaves.

  3. Cover with lid and place something heavy over the lid so the steam doesn't escape, cook it over very low flame for 25 - 30 mins.

  4. Your Butter Chicken Biryani is now done.
