Classic Chicken Dum Biryani

  • 1 kg Chicken

  • 6 cups Rice

  • 2 tbsp Ginger Garlic Paste

  • 2 tbsp Home Made Biryani Masala

  • 1 tsp Turmeric

  • 2 tsp Chilli Powder

  • 300 gms Yoghurt

  • Bunch of Coriander finely chopped

  • Bunch of Mint finely chopped

  • 2 tbsp Fried Onion

  • Salt as per taste

  • Kesar in milk (for color)

  • Ghee 3 tbsp

  • 3 Green Chillies finely chopped

  • Oil as desired

  • Nuts for Garnish

  • 2 Bay Leaves

  • 4 Green Cardamon

  • 4 - 5 Peppercorns

  • 3 Cloves

  • 2 Star Anise

Step by Step


  1. Take 1 kg Chicken wash it well, then in the same bowl add turmeric, chilli powder, biryani masala, fried onions, yogurt, 1 tbsp ghee mint leaves, coriander leaves, green chillies and salt and mix all these ingredients well and refrigerate it for 4 - 5 hours

  2. Wash the rice, take water in a vessel, add cardamon, pepper, bay leaves, salt, little oil, cloves stir it and then add the rice to the vessel and PAR boil the rice (don't cook it completely)

  3. Heat oil in another pan and add the marinated chicken and let it cook for 20 - 25 mins until 80% done. Once the chicken is 80% cooked, ensure there it little gravy left

  4. Prepare to layer the biryani, take an empty vessel, put a layer of rice, then add chicken with gravy, again add another layer of rice, sprinkle some fried onions, mint leaves, coriander and kesar milk for color and then repeat the same step. On the top layer of rice, add fried onions, mint leaves, coriander, ghee, different type of food color and fried nuts and cover with lid

  5. Place the biryani vessel on a flat old pan and keep something heavy to keep the lid closed tight on the biryani. Let the biryani cook on a low flame for 40 - 45 mins.

  6. Once cooked serve biryani with raita.
