1 Kg Chicken ( cut in medium pieces)

Chopped onion- 1 (medium)

Coriander Leaves (large bunch)

Garlic cloves(peeled)-7 to 8

Chopped ginger-2 inch

Peppercorns 15 to 20

Cumin seeds- 1/2 tsp

Cloves – 5 to 6

Cinnamon – 1 inch

Star Anise - 2 Pcs

Green Chillis – 3

Salt as per taste Lime ½ and coriander for garnishing

For Marination

Garam Masala 2 tsp

Turmeric Powder 1 tsp

Salt 2 tsp

Lime ½ ( Squeezed)


Marinate the chicken with garam masala, turmeric powder, salt and lime for about 1 hour. In the meanwhile prepare the green masala by adding chopped onion, garlic, ginger, green chillis, coriander leaves, cumin seeds, cloves, peppercorns, cinnamon and star anise to the grinder and add ½ cup of water to it. Coarsely grind all the ingredients to a thick paste In a pan, heat oil ( can add very little oil) and add the green masala and fry it until the masala becomes pale green in colour. Add the marinated chicken and stir it well so the masala covers the chicken entirely. Add 1/4th cup water, salt as per taste and cover it with a lid. Let it cook for about 15 minutes on medium-low flame. After 15 mins remove the lid and squeeze half a lime and let it cook further until the water is dried. The green chicken roast is ready to be served and goes best with pea pulao or bread.
