One Pot Dry Potato Bhaji | Instant Dry Potato Bhaji/Sukhi Aloo Bhaji

  1. 2 Medium Potatoes chopped in cubes

  2. 2 Garlic Cloves finely chopped

  3. 8 - 10 Curry Leaves

  4. 2 Green Chillies roughly chopped

  5. 1 tsp Cumin seeds (Jeera)

  6. 1 Medium Onion finely slices

  7. 2 pinch Asafoetida (Hing)

  8. 1 tsp Turmeric

  9. Salt as per Taste

  10. Cooking Oil

  11. 2 tbsp Coriander finely chopped

Step by Step

  1. Heat Oil in a pan, add cumin seeds (jeera) once the oil is heated

  2. Add potatoes to the pan and stir it well, and then add chopped garlic, chopped chillies, curry leaves , turmeric, add onions, salt as per taste and asafoetida (hing) and give it nice stir

  3. Cover with lid and let it cook for 6 - 7 mins on medium low flame, but make sure to keep checking on the potatoes so they don't stick to the pan and stir it occasionally.

  4. Once the potatoes are cooked add chopped coriander, stir it well and take it off heat

  5. Serve Potato Bhaji with hot pooris
