Egg Fried Rice Home Style

1 1/2 cups Par boiled Rice
1/2 Capsicum finely chopped
1/2 Carrot finely chopped
2 Spring Onions sliced finely
1 tbsp Finely chopped Ginger Garlic
1 tbsp Soy Sauce mixed with 1 tbsp Vinegar
1 tsp Pepper
Salt to Taste
Step by Step
Take a pan and heat some oil
Add mixed vegetables, stir well, cover with lid and let it cook for 3 - 4 mins
Remove the fried vegetables in a plate and in the same pan heat some oil
Beat 3 eggs with salt and pepper and add it to the hot pan.
Stir until the egg is finely scrambled
Remove the scrambled eggs into the same plate of vegetables.
Add little oil to the pan, Add finely chopped garlic and ginger and fry until the raw smell is gone.
Add half amount of Soy sauce and vinegar and cook it till the sauce is reduced.
Add fried vegetables and eggs to the pan and mix it well.
Add Spring onion leaves, pepper and Ajinomoto(MSG) (optional)
Add Par boiled rice and salt as per taste and stir it well.
Add remaining soy sauce vinegar, give it a quick stir (break the rice lumps if formed)
Cover it with the lid and let it cook for 1 - 2 minutes
Fried Rice is ready to be served!
