Goan Recheado Homemade Masala


  1. 10 - 15 Kashmiri Chillies

  2. 1/2 tsp Cumin seeds (Jeera)

  3. 8 Cloves

  4. 2 inch Cinnamon stick

  5. 6 Peppercorns

  6. 7 - 8 Garlic cloves

  7. 1 tbsp Sugar

  8. 1/2 cup Vinegar

  9. 1/4 cup water

  10. 3 Green Cardamon

  11. 1 Onion sliced

  12. 1/2 tsp Salt

Step by Step

  1. Heat some oil in a pan, and all cumin, cardamon, cinnamon, cloves, peppercorns and roast it well, fry it for sometime.

  2. Then add onions and garlic give it a stir and let it fry

  3. Then add kashmiri chillies, stir it and let it roast well until the onions turn golden brown.

  4. This is optional. Can add Kasuri methi or methi seeds for flavor

  5. Roast all the spices well

  6. Remove it off heat and let the spices cool down

  7. Then add all the roasted spices in a grinder, add sugar, salt, vinegar and little water and grind the spices to a fine paste (add little water so it can be stored for longer period)

  8. Your Goan Recheado Masala is now ready. Please store in an airtight container in the fridge and should be good enough for 6 months. Goes well for stuffing the Mackerel or any other fish.
