Inside stuffing:

  • 1/2 Onion finely chopped

  • 2 Garlic cloves grated

  • 1/2 Maggi Cube

  • 7 - 8 Big Prawns finely chopped OR 10 - 15 small prawns

  • 2 Green Chillies finely chopped

  • 1 tbsp Butter

  • 2 tbsp All Purpose Flour (Maida)

  • 1/2 tsp Pepper powder

  • 1/2 cup Milk

  • 1 Cheese Cube

  • Salt

Outer covering

  • 1 & 1/2 cup Milk

  • 2 tbsp Butter

  • 1 cup All Purpose Flour (Maida)

  • Salt

  • Bread Crumbs

  • 2 Eggs beaten

Step by Step:

For the inside stuffing:

  1. Heat some oil in a pan, then add the onions and saute well. Now add the chopped prawns to the pan mix it well and saute it further, meanwhile add the grated garlic and the green chillies and sprinkle some salt, mix it all really well and saute for sometime, bring it all to one end of the pan and on the other side, add butter and add the all purpose flour to the butter, pepper powder and the maggi cube, now mix it all well along with the prawns. Now add the milk into the pan and let all the ingredients mix well, Now add the cheese cube keep stirring until the mixture thickens and forms a dough like texture. Take it off heat and let it cool down.

For the outer covering:

  1. In a hollow vessel, pour the milk, now add the butter and some salt as per taste and stir it well and bring it to boil. Now add All Purpose Flour and give it a good stir until the mixture forms a dough. Take it off heat and proceed to knead when it's piping hot (use a spoon to help) make sure it's still hot when you're kneading the dough or it won't turn out good. Form small balls out of them for a convenient rolling. Make sure to dust a little flour on the rolling plate and now proceed to roll it into a shape of chapati or roti and if use a cutter or medium size bowl to get round shapes as shown in the video. Once it's done. Now use a tsp and scoop some prawns filling and place it in between the round outer covering and then close it very gently forming a half moon as shown in the video. Be very gentle in this process as the dough can easily break.

  2. Now dip the prawns rissois into the egg wash and then coat it well with the bread crumbs and place it on a plate,

  3. Once you've done coating all with egg wash and bread crumbs, place the plate in the freezer for 1 hour.

For Frying the Rissois

  1. After 1 hour, heat some oil for deep frying. (Please make sure the heat is on low flame or the rissois will burn)

  2. Once the oil is hot enough, fry the rissois in batches, fry until both sides turn golden brown and then place on to a plate.

Your Prawns Rissóis de Camarão is now ready to be ravished.
